Two Wild Game Recipes That Aren't Stew

When you ask someone what they like to do with their wild game, they'll often tell you they like to make stew. Indeed, making stew is a good use for wild game. But if all you ever do is make stew from your game meat, you're missing the opportunity to branch out and try other recipes! Here are some other wild game recipes that are worth trying.

Sage and Onion Meatloaf With Game Meat

Ingredients:

  • 1 1/2 pounds ground game meat
  • 1/2 cup breadcrumbs
  • 2 eggs
  • 1/2 cup whole milk
  • 1 onion, finely minced
  • 1 tablespoon canola oil
  • 1/2 teaspoon dried sage
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce

Beat the eggs lightly. Stir in the breadcrumbs and milk. Let this mixture sit to the side for at least 20 minutes while you saute the onions.

To saute the onions, heat the olive oil in a skillet. Add the onions and saute until tender. Let cool to room temperature.

Combine the breadcrumb mixture with the onions and the other remaining ingredients. Mix well. Press the mixture into a loaf pan, and bake at 350 degrees F for 60 minutes, or until the meatloaf reaches an internal temperature of 165 degrees F.

Shredded Barbecue Game Meat Sandwiches

Ingredients:

  • 2 pounds wild game meat
  • 1/2 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 cup apple cider vinegar
  • 1 cup bottled barbecue sauce of your choice

Season the game meat with salt, pepper, garlic, and onion powder. Place it in a slow cooker and add the vinegar. Cook on low for 6 hours or high for 4 hours. The meat is done when it easily pulls apart into shreds.

Shred the game meat, and return it to the crockpot with all of its juices. Stir in the cup of barbecue sauce. Turn the crockpot to low, and let the mixture warm up again for about 20 minutes.

Serve the meat on the sandwich rolls of your choice. You can top it with some extra barbecue sauce or even slices of cheese if desired.

Both of these recipes are easy to make with whatever sort of game meat you have on hand. The sandwiches are especially good with wild boar meat, which tastes a lot like pork, and the meatloaf comes together well with either bear, venison, or a combination of the two.
